Let it be known that I love to cook and I LOVE pesto! It is so delicious and really good for you--lots of antioxidants!! It is delicious on pasta, or in an omelette with parmesean cheese spread on top. Yum!
You will need:
-50 good sized fresh basil leaves (1 - 2 cups packed)
-4 small cloves garlic
-1/3 to 1/2 cup pine nuts (walnuts are a good substitute)
-about 1/2 tsp. salt (preferably coarse sea salt)
-1/2 cup grated parmigiano-reggiano cheese, plus extra for serving
-about 1/2 cup extra-virgin olive oil
1. To make the pesto, in a blender grind together the basil, garlic, pine nuts, and salt until a paste forms. Work in the cheese, then begin adding the olive oil, first only in a trickle, gradually working it into a paste. (If you want to make it authentically, use a mortar and pestle to grind the ingredients--it is said to taste even better this way...but whateva!)
